English Muffin Bread

5 1/2 to 6 cups flour
2 pkgs yeast (or 4/12 tsp)
1 Tbsp. sugar
2 tsp. salt
1/4 tsp baking soda
1/2 cup water
cornmeal

Combine 3 cups of flour, yeast, sugar, salt and soda.

Heat liquids to 120-130 degrees. Add to dry mixture. Mix well.

Stir in enough additional flour to make stiff, tacky batter (not a dough). Spoon into two (2) 8 1/2 x 4 1/2 loaf pans that have been greased and coated with cornmeal. Sprinkle top of bread with cornmeal. Cover and let rise in warm place for about 45 minutes.

Bake at 400 degrees for 25 minutes. Remove from pans immediately. Cool, slice,and toast.
